The first wine to leave the cellar each year, pressed off its skins early and bottled before the following spring. Its colour is the whole argument for drinking it now: a blue-edged violet that belongs only to wine that has not yet begun to age.

We make a little of it every year for the cellar door and for the village. It does not keep, and it is not meant to.
