Our house blend, held back and released only when it has settled. Seven years on, the colour has turned from ruby toward a red brick at the rim — the polymeric pigments are forming, and the wine has begun to brown as it deepens.
This is the wine that shows the arc most plainly beside the current Pinot: the same fruit, one law, several years apart.
